Based on the National Interest Market of Lille – the 3rd most important in France – Pleurette brings fresh and organic mushrooms, transforming oyster mushroom residues into a healthy food texturing agent. The project focuses on sustainable practices by recycling production places, urban residues, and production rejects in order to reduce food waste and produce quality food. With a team of 12 people operating from Lille, and being part of Euralimentaire and Lille Métropole, the project is supported by the French Public Investment Bank (BPI France) and is directly involved in contemporary Foodtech trends.
