The Founders’ Journey: From Corporate Life to Kombucha Crafting

Meet Ellen and Alex, the dynamic duo behind Hurst Botanicals. They both felt a niggling sense that their corporate gigs weren’t quite hitting the mark. So, they ditched the 9-to-5 grind and set off backpacking across Asia, Southeast Asia, and Australia. This break from routine sparked their creativity and planted the seed for something new. Just as they reached Australia, the world hit pause with Covid-19. They grabbed the last flight out of Melbourne and headed back to the UK, where a family welcomed them into a barn in Hurstpierpoint. Surrounded by nature and the South Downs National Park, they began brewing and fermenting in that humble barn kitchen. That’s where Hurst first started to take shape.

From Barn to Brewery: Setting Roots in Ireland

When Ellen and Alex decided to take the plunge with Hurst, they had the perfect launchpad — right beside Ellen’s family pub in Co. Clare. Their journey culminated in Clarecastle, Ellen’s home village, where they pieced together their new business on Ireland’s west coast. It’s a story of coming full circle, blending personal history with passion and place.

Backgrounds That Brew Success

Ellen’s roots run deep in food. Growing up, she spent Sundays experimenting with every Rachel Allen recipe she could find, thanks to her mum’s influence. She studied Nutritional Science at UCC and caught the food development bug during an internship. This passion took her to San Francisco, where she worked with a sensory science team in Silicon Valley, focusing on meat-free innovation. Back in Ireland, she continued in food Research and Development, launching new products across Irish and UK markets.

Alex, on the other hand, grew up near London, surrounded by fresh veggies from his nan’s garden. His love for good food was nurtured early on. He studied business and kicked off his career in a bustling fresh produce company in London. He stayed in the commercial food sector, working with national and international businesses until moving to Ireland with Ellen to start Hurst.
